Ingredients Checklist(tap to check off)
- 2 medium (8-inch) Whole wheat or golden corn tortillas
- 3/4 cup (75g) Shredded sharp orange cheddar cheese
- 2-3 tablespoons Leftover shredded chicken or black beans (optional)
- 1/2 teaspoon Butter or mild olive oil for the pan
- 1/4 cup (60ml) Mild green salsa 'slime' or guacamole for dipping
Cooking Instructions(tap to mark complete)
- Take one tortilla (this will be the top). Using the tip of a paring knife or kitchen shears, cut out two triangle eyes, a triangle nose, and a zig-zag pumpkin smile.
- Heat a skillet over medium heat with a tiny smear of butter or oil. Place the uncut bottom tortilla flat into the pan.
- Scatter the shredded orange cheddar (and optional leftover chicken or beans) evenly across the bottom tortilla.
- Place the carved Jack-O'-Lantern tortilla on top. Cover the pan with a lid for 2 minutes to let the cheese melt and bubble through the carved eyes and smile.
- Remove lid and cook for another 1-2 minutes until the bottom is golden and crisp.
- Slide onto a board, let rest for 2 minutes, and pack whole or cut into wedges. Serve with a small dipping cup of guacamole or mild salsa!
