- 2 large (10-inch) Large whole wheat or spinach tortillas
- 1/3 cup (80g) Whipped cream cheese (plain or chive & onion)
- 6-8 thin slices (120g) Sliced oven-roasted turkey or chicken breast
- 1/2 cup (50g) Shredded mild cheddar cheese
- 1/3 cup (40g) Finely shredded carrots
- 1 packed cup (30g) Baby spinach leaves, stems removed
Cooking Instructions(tap to mark complete)
- Spread the whipped cream cheese evenly over each tortilla, leaving a 1/2-inch border around the edges to act as the seal.
- Layer the baby spinach leaves flat across the cream cheese, followed by the turkey slices.
- Scatter the shredded cheddar and shredded carrots evenly across the center.
- Roll the tortilla tightly into a log, pressing gently with your palms to ensure the filling stays compact.
- Wrap the log in parchment paper or foil and chill for 10 minutes in the fridge (or slice immediately if in a rush).
- Slice into 1-inch thick pinwheels using a serrated knife and pack neatly into a bento box with cherry tomatoes or cucumber coins!
